Ingredients for crust:
1 1/4 cups dry or dehydrated almonds and walnuts
3/4 cup dry raisins and medjool dates (combined)
some lemon rind
1. Process nuts in food processor.
2. Add raisins and dates to the nuts in food processor and process them until the mixture starts to bind together. Press the mixture into a 7 ‘ round pan.
3. Grate the lemon rind on top of the nut,raisin,date crust.
Cashew coconut cream:
1/2 cup cashew (soak for 4 hrs)
1 lemon juice
2 tbsp organic cane sugar or any sweetness of choice.
1/2 cup coconut meat
1 tbsp coconut oil
pinch of sea salt
some pure water is needed
fresh shredded coconut top of cream
Blend until smooth cream pour on top of the crust,add shredded coconut on top of cream.
Decorate with slices colorful fruits you love~ kiwi fruits, pineapple, grapes, cranberries .
