
My son learned to cooked this healthy soup from a Persian friend, this Persian style of onion soup help to keep your body healthy and warm.
Very good soup, delicious with simple ingredients and easy to cook.
Ingredients:
2 tbsp of Olive oil
5 large union, peeled and thinly sliced
2 slice of ginger
Pinch of Himalayan salt and black pepper
1/2 teaspoon ground turmeric
1/2 tsp of organic fenugreek seeds
1/2 tsp of fresh mints
2 tbsp of organic plain flour
600-700 ml of pure filter water
1 cinnamon stick
Juice from 1 lemon
1 tsp raw sugar
1 tsp vegan vegetable seasoning
Few parsley springs,chopped
Method:
1.Place a soup pot over a medium heat. Add Olive oil,onions and some veggies seasoning . Cover and sweat for 15 minutes until the onions is soft, stirring occasionally, removed the lid and increased the heat very slightly.
2. Add the spices, mints and stir in the flour. Cook and stirring frequently about 3 minutes.
3. Pour in the filter water whisking as you do so to prevent lumps is forming.
When is has all been added, place in the cinnamon stick fenugreek then simmer over a low heat, cover the lid to cook for another 35-40 minutes.
4. Stir in the raw sugar and lemon juice and seasoning.
5. Discard the cinnamon stick,ladle the hot onion soup into a soup bowl and topping over with parsley and fresh mints before serve.
One word delicious! As mother this is a definite a wonderful gift from son preparing this delicious soup for us.
