2 -3 small bowls of cook basmati rice or jasmine rice (cooked overnight)
1/2 cup pineapple chunks
1/2 cup of Eryngi mushroom cut into some cube
1/2 cup of carrot cut into dice
1 slice ginger diced
1/2 tsp sea salt and dash of pepper
1/2 tsp some chilli powder,curry powder or chilli flake
1/3 tsp turmeric powder
1/2 tsp tamarin
1/3 veggie sesaoning
1-2 tbsp sesame oil
some fresh coriander,white sesame seeds ,roasted cashew for garnish
1.Drizzle 1 -2 bsp sesame oil in a wok over medium heat. Add diced ginger.carrot,stir-frying until fragrant for 1 minute.
2.Add in the cooked rice, pineapple chunks, raisin and eryngi mushroom. Drizzle the tamari ,salt ,curry powder,chilli power or chilli flake, turmeric over and gently stir-fry to combine well for 5-8 minutes.
3.Removed form the heat.
4.To serve, scoop the fried rice in a carved-out pineapple.
5.Top with coriander,sesame seeds ,roasted cashew
