Vegan Carrot Cranberries Loaf
Vegan Carrot Cranberries Loaf

A simple carrot cranberries cake


2-3 Ripe Banana -mashed

1/2 cup Organic Raw Cane Sugar

2 cups Organic Self-raising Flour

1 tsp  baking soda

1 cup shredded Carrot

1/3 tsp cinnamon

1/3 tsp nutmeg

Pinch of sea salt

1/2 cup non GMO sugar free soymilk or any nuts milk of choice

2 tbsp cooking oil

2 tbsp orangic apple cider

1 cup mixed berries-blueberries and cranberries

some chopped almond


Preheat the oven 180°C

1.Sieve the dry ingredients flour, baking soda,cinnamon, nutmeg together keep aside.

2.In a mixing bowl , mashed banana add sugar mix until sugar dissolved ,slowly add in soya milk the, shredded carrot,berries, chopped almond, fold in all the dry flour ingredients.

3.Add cooking oil and mixed well.

4.Lastly add 2 tbsp organic apple cider vinegar.

5.Line cake mound with parchment baking sheet.

6.Bake for 40-45 mins( 180°c),according  to your oven heat,bake until an inserted toothpick at centre of the cake comes out clean.

7.After baked carefully transfer the cake to the wiring rack and allow to cool before cutting and serving !

Notes :

Pls check your oven temperature and heat !

~Different brands of oven has different ciruculation of heat, so the baking time is not fixed.~

~ Different flour have different consistency~
