1 medium Pumpkin (I USE ONLY HALF PUMPKIN )about 600 gm
1/2 tsp chilli powder ( add more if you love spicy)
1/2 tsp sea salt
1 tsp vegan margarine
1 tsp of grated ginger
1/2 tsp finely ground black pepper
some rosemary & oregano
some finely chopped parsley
1/3 cup of vegan veggie stock
2 sliced of lemon juice
1. Preheat oven to 180°C. Halve pumpkin,and remove skin and discard seeds. Cut pumpkin lengthwise into cut into chunk . Rub pumpkin with 1 tbsp of softened vegan margarine, add all seasoning and place on a baking pan .
2.Bake until pumpkin begins to soften and brown on the outside about 50-60 minutes ( according to your oven heat’n time setting). Carefully remove from oven and transfer to a serving platter. Just before serving, squeeze lemon juice over the bake pumpkin .
