Vegan Ampalaya Yam (Taro) Rice


This is the easy and famous one -pot chinese dish .

This is slight different Yam rice which I had added some Ampalaya .

Ingredients :

200gm Basmati rice washed and drained

400ml water to cook  rice

200gm yam (taro), peeled and cut 1 inch cube  ( love to add more yam)

100 gm ampalaya cut 1 inch cube

3 dried shiitake mushroom soaked  slice or cube fungi

1 slice ginger shredded

2  pandan leaves , tied into a knot

1  star anises

½ cinnamon stick 1 inch (if You love cinnamon)

½ teaspoon himalayan salt, or to taste

1 teaspoons light soy sauce

1/2  teaspoons dark soy sauce ( if You like dark rice you can add more )

1 tablespoon sesame oil

dash of ground white pepper

1/2 teaspoon veggie seasoning (optional)

1. Combine all the ingredients into an electric rice cooker, expect ampalaya

mix well and turn on and cook rice as usual,when the when the rice is nearly cooked add in ampalaya on top of rice.

2. When done leave the cooked rice to rest, covered, for 25 minutes.

3 After 25 minutes  use the rice scoop to stir the yam rice and loosen it up.

Garnish with some chopped cilantro  and

Serve with some homemade vegan sambal belacan
