Hellooooo~ Happy Meat Free Monday everyone Sharing you today a meat free healthy delicious Stuffed Jackfruit with Quinoa. Not only is it tasty, full of Fiber, Protein, Gluten free and delightful!
Jack fruit is an excellent Vegetarian/Vegan substitute for meat. In fact, Jack fruit referred to as Vegetable meat.
You will love stuffed Jackfruit the delicate sweetness which lingers in the mouth and urges you on to take the next morsel. Jackfruit is rich in potassium, calcium, and iron and the seeds are edible which are rich in protein. The boiled seeds taste like a chestnuts but not as sweet, It’s soft and creamy. You can enjoy them plain or roasted salted seeds in oven !
We absolutely fell in love with this dessert with unique combination, delicious flavors taste with coconut cream and they were delightful! Yum!
1 cup mixed Red and White Quinoa
1/4 cup Goji berries
2 packets Jackfruit pods
some roasted cashew
Grated fresh coconut and 1 cup of Fresh coconut milk
1/4 tsp of sea salt
2 tbsp of organic pure coconut oil
2 cups filter water
2 Pandan leaves
1.To prepare quinoa sieve quinoa and run it under the tap water for a minute or two while stirring the grain around with your fingers.
2. Pour the quinoa in rice cooker add in 2 tbsp coconut oil,water, sea salt and pandan leave on top until cooked.
3. After cooked let quinoa cool down then removed the pandan leave place cooked quinoa in bowl add goji berries and cashew, some grated coconut, fluff up with fork.
4. Slice the jack fruit pod in half lengthwise removed the seeds, place a spoonful of mixed quinoa inside.
5. Garnished with roasted cashew nuts and some fresh shredded coconut.You can also toast the shredded coconut. Toasting the coconut will also bring out a richer & nuttier flavor too.
