A simple and easy Gluten free Raw Pumpkin and Chickpeas Goji Berries Quinoa
Quinoa is high in protein,calcium, iron, vitamin B and vitamin E, while Goji berries is high in antioxidants and Vitamin C.
1 cup mixed Organic Quinoa
1/4 cup Goji berries
1/4 tsp of sea salt
2 tbsp of organic pure coconut oil
2 cups filter pure water
2 Pandan leaves
1 stalk Lemon grass cut into half
1.To prepare quinoa sieve quinoa and run it under the tap water for a minute or two while stirring the grain around with your fingers.
2. Pour the quinoa in rice cooker add in 2 tbsp coconut oil,water, sea salt and pandan leave, lemon grass on top until cooked.( To cook the quinoa. There should be at least twice as much volume of water than quinoa.)
3. After cooked let quinoa cool down then removed the pandan leave, lemon grass, add the goji berries in the cooked quinoa, fluff up with fork.
2. 1 cup chickpeas- Soaked the chickpeas over night . Cooking with pure filter water around 30 minutes or You can Sprouted chickpea 2 days before use.
3. 150 gm of fresh wakame seaweed mix with minced ginger, sea salt, homemade fruits enzyme and sesame oil, sprinkle with toasted white sesame seeds.
4. A cup of Medjool dates.
5. Kiwi-cut into half.
