Mandarin Orange & Figs Vegan Cake
Mandarin Orange & Figs Vegan Cake


1 cup of squeezed mandarin orange juice + 1 cup of ice cold pure water

1 tsp orange essence

1 cup of molasses sugar

1/2 cup of chopped dry figs

1/2 cup of pitasco- chopped

5 tbsp of pumpkin seeds- 1 tbsp for topping

3 cup organic all purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp vanilla powder

1/4  cup cup olive oil

2 tbsp white vinegar or apple cider vinegar


1.Preheat oven 190″C

2. Sieve all the dry flour ingredients.Set aside

3.In a mixing bowl,add sugar and mandarin orange juice ,orange extract, vanilla extract,whisk until the sugar is dissolve

4.Fold in the dry flour ingredients ,then chopped dry figs, pumpkin seeds,mix well

5. Add 1/4 cup of olive oil

6.Add in 2 tbsp of white vinegar very last minutes

7.Pour into 9′ round mould and sprinkle sme pumpkin seeds on top

8.Bake for 190″c for 40-45 minutes till done, or according to your oven heat,bake until an inserted toothpick comes out clean

9.After baked transfer the cake to the wiring rack and let it cool completely ,cut into slices .
