Ingredients for Crust:
1 cup Walnut (soak for 4 hours)
1 cup Almonds (soak for 8 hours)
10 mejodee dates-pitted
1/4 tsp natural sea salt
*Dehydrator almonds and seeds*
~ If you don’t have a dehydrator it can be done using the warm setting on your oven, though highly energy inefficient.*
Place all ingredients in blender blend until finely chopped .Do not over process it could be too sticky.Press into the base of a spring form cake mould.
Put in the refrigerator while you are making your cream filling .
Lime Passion fruit Cream Cheese :
5 Lime juice
1/2 Lemon juice
2 Passion fruits pulp
1 yellow kiwifruit
1 cup cashew (soak over night)
3 tbsp coconut oil
some water is needed (1/4 cup pure water)
2 tbsp organic agave nectar or sweetness of your choice
Place all the ingredients in vita-mix container blend until smooth and creamy.
Pour over the crust.
Refrigerate over night or place in the freezer to set .
3-4 Passion fruits pulp
1 tbsp agaveÂ or sweetness of your choice
Strain the excess liquids of the passion fruits into a cup and add on top of the cream cheese.
Wet knife after each of the slice .
