Jicama Pink Salad
Jicama Pink Salad



1 large piece kelp (soaked, wash kelp thoroughly under running water, and wash again in
warm water for 5 minutes drain and cut into long strips )
organic cabbage-shredded
1/2 fresh fennels -cut strips
1/2 carrot -shredded
1/2 jicama -cut into strips
some lettuce
1/2 cucumber-cut into strips
1 slice ginger
5 roselle flowers – calyx, the red outer skin peeled & washed
some toasted white sesame seeds
Pink Dressing:
1/2 piece red dragon fruit
2 passion fruits
1/2 cup cashew (soaked)
1 tsp flax seeds (soaked)
1 tsp pumpkin seeds (soaked)
1/2 lemon juice and rind
1/2 tsp tamari
1/2 tsp chilli flake or bird red chilli
pinch of himalayan salt
1 tsp grape seeds oil
Dash of ground black pepper
Mixed all ingredients with pink dressing. Simple and health salad
Refrigerate 25 minutes until ready to serve cold.
Sprinkle some toasted sesame seeds or pine nuts .
