This is A Great recipe when you have a glut of Passionfruit Love to add passion fruit in to my pineapple jam.
1 whole Pineapple cut into 1/2
I use only 1/2 of it ( you can use the whole pineapple and double passion fruits pulp/sugar in your recipe)
8-10 Passion fruits Pulp
1/2 pkt of sugarcane rock sugar you can reduce the sweetness (to your taste)
1 knob about 2 inch of grind ginger
Cut pineapple core ‘n eyes . Chop pineapple into small pieces add 4 passion fruits pulp all place in a blender.*Pls don’t not add water * Blend until it is pulp but not till it is so fine it becomes juice. Pour the mixture in a stew pot add remaining 6 passion fruits pulp ,grind ginger .Boil over medium heat …Simmer, stirring constantly until the liquid is absorbed. Add the rock sugar to taste to make sure it is not too sweet,stir the jam constantly until sugar all dissolved to make sure it does not burn. Once it gets sticky and caramelised, switch off the heat and lets it cool ,pour into sterilized jars or freezer containers,’n keep in refrigerator.
