1 stick Burdock root
1 medium carrot
4-5 stitake mushrooms (soaked for few hours till soft )
3 -4 sliced old ginger
1 cup of chickpeas (soaked or overnight )
1/2 tsp natural sea salt
1.5 liter of pure water
some chopped parsley leaves
Wash and clean the burdock root cut into 2 inci strips ,carrot same cut int strips.
Wash and drain ‘n rinse the chickpeas.
Add water in the rice cooker or stew pot ,and all above ingredients cook for at least 2 hour in low medium heat under all the chickpeas,burdock cooked until soft .
Serve hot soup with some chopped parsley or coriander and brown rice .
Healthy simple Burdock soup !
