
Coconut Sesame Vegan Cookies
These cookies with added pan fried shredded coconut, coconut milk. By the way, coconut milk is really awesome stuff and it’s great for baking cookies, cakes, great for curry, salad dressings and good for your healthy. This Coconut cookies is loaded with wonderful dried fried coconut, toasted white sesame. Considering that many flours starches are highly refined and not enriched with any vitamins or minerals, adding pan fried shredded coconut, coconut milk and sesame seeds to cookies adds some nutritional boost !
INGREDIENTS
1/2 cup Nuttelex Original
1/2 cup Coconut Sugar or any sweetness of your choice
1 1/2 cup Pan fried Shredded Coconut
1 1/2 cup of Organic All Purpose Flour
3 tbsp toasted white sesame
2 tbsp thick coconut milk/cream
1/4 tsp baking powder
Method:-
1. Sieve the flour, baking powder.
2. In non-stick pan add the shredded coconut. Allow to heat up, shaking regularly to prevent sticking and burning. A wooden skillet can be run through to pick up any coconut that sticks during toasting.Removed the pan from the heat when the coconut just begins to turns brown color, allow to cool and set a side.
3. Place the Nuttelex, coconut sugar, blend until fluffy and smooth.
4. Add in fried coconut, coconut milk, toasted sesame, fold in the flour.
5. Mixed well and divide them into balls,use spoon to portion out cookies preferred thickness cookies of your choice.
6. Bake in preheated oven 180 degree C for 25 mins till brown.Let it totally cool on a wire rack to completely. Keep in an air-tight container.
