220gm organic all-purpose flour
20 gm rice flour
2 tbsp coconut sugar
1/2 tsp. bicarbonate of soda
Pinch of sea salt
150 ml coconut milk
250 ml filter water
1 tbsp white sesame seeds
some chopped walnuts
3 tbsp vegan butter, melted
1 banana thinly slices
some dried fruits
Hershey’s chocolate syrup
Vegetable oil for brushing pan
1.In large bowl, whisk flour, sugar, baking powder and salt. Add coconut milk, water ,sesame seeds, chopped walnuts, vegan butter stir until flour is moistened smooth batter.
2.Heat non stick pan over medium heat until drop of water sizzles; brush lightly with oil.
Using a ladle pour the batter carefully. The idea is to have an even layer of batter to cover the pan.
Cook 2 to 3 minutes or until When bubbles appear on the surface, carefully spread slices banana on top.
3. With spatula fold both side of the pancake cook 2 minutes more or until golden brown.
4. Repeat with remaining batter, brushing griddle with more oil if necessary.
5. Drizzle with Hershey’s chocolate syrup and topping with dried fruits and sesame.
Serve while warm. The outside should have a lovely crispiness and the inside soft with the banana filling oozing out
