300 gm sweet potatoes
300 gm taro (yam)
1 cup young coconut meat cut into strip
1/2 cup ginkgo nuts
700 ml filter water
120 gm coconut palm sugar ( sweetness to your taste)
2 slice of fresh ginger.
1. Bake the ginkgo nuts in the oven or pan fry for 10-15 minutes. when totally cool down break the hard cover. The brownish skin comes off easily with the hard shell. Is the best way than soak in water.Fast and Easy !
2. Peel the sweet potatoes and taro, wash and cut into cube.
3. Prepare a soup pot pour in filter water place the knotted pandan leaves, slice ginger to boil for 10 minutes.
4. Place sweet potatoes, yam, ginkgo nuts bring to boil then reduce the heat ,cover and simmer for about 15-20 minutes. Once the sweet potatoes, taro are thoroughly cooked, then add in coconut palm sugar and coconut meat cook for another 5 minutes.Turn off the heat.
5.Serve hot or cold with ice cube, Enjoy !
