Chinese New Year is just around the corner, wanted to make something with fruit ! Heres a great new muffin flavour I tried ~Mandarin orange poppy seed muffins~Vegan, low fat, freshly squeezed mandarin orange juice. AND they look absolutely amazing! This is an easy recipe and perfect with your kids and friends.
340 gm Organic all purpose flour
1 tsp Baking soda
130 gm Organic Raw sugar to your sweetness.( orange juice got its natural sweetness)
70 ml Organic Grape seeds oil
140 ml filter water+ soak with 2 tbsp of golden flax seeds
200 ml Mandarin Orange juice and Chop some peel into tiny pieces.
1 tbsp Rice vinegar or Apple cider
1 tsp vanilla powder
2 tbsp poppy seeds
1 tbsp sunflower seeds
pinch of sea salt
How to prepare:
Preheat the oven to 180°C/350°F.
In a bowl sieve the flour and baking soda, keep aside.
Prepare another mixing bowl pour in orange juice, water, flax seeds,sugar together mix well till the sugar dissolves,
Mix in the oil in juice mixture then add the dry ingredients necessary to mix both parts add the apple cider very last minutes before you bake.
Prepare the muffin molds or paper cups, made about 14 muffins.
Use ice cream scoop to fill muffin cups about 3/4 of the way full.
Bake for about 25 minutes or until a toothpick comes out clean.
There you go — the freshly bake Mandarin Orange Poppy Seed Muffins done.
