Banana Fruity Vegan Cake
200 gm Ripe Banana-mashed
1/2 cup Organic molasses sugar
2 1/2 cups Organic Plain Flour
1 tsp Aluminum Almonds milk free Baking Powder
1 tsp Baking soda
1 full cup Mixed fruits- Here i use ,Medjool dates , Apricot, Blue berries, Cranberries
1/2 cup Mixed nuts-Almonds and Walnuts
1/8 tsp Nutmeg powder
300 ml Almond milk or any nut milk of choice
2 tbsp Red flax seeds-soak in almond milk
50 ml sunflower oil
1 tsp vanilla extract
2 tbsp Rice vinegar
Pinch of salt
1.Sift the flour, nutmeg powder, baking soda, baking powder together, set aside.
2.In a mixing bowl , mashed banana add vanilla essence , sugar beat for 5-8 minute, slowly add almond milk and flax seeds.
3. Fold in all the dry flour ingredients and salt,nuts and dried mixed fruits.
4.Pour in the sunflower oil mixed well.
5.Lastly add 2 tbsp rice vinegar.
6. Pour better into 6′ by 10′ mould.
7.Bake for 50-55 mins( 180°c),according to your oven heat,bake until an inserted toothpick at centre of the cake comes out clean.
8.After baked transfer to the wiring rack and allow to cool before serving !Click here for reuse options!
