Steamed Gluten free Cassava Coconut Cake

I love steamed Cassava cake is one of my favourite childhood treats. This steamed cassava cake is a very common sweet snack/ kuih in South East Asian. Malaysia and Singapore calls them~ Nyonya kuih ubi kayu~.

There are many ways to prepare this delicious cassava, you could steam it eat with sambal belacan ,wrapped in fresh banana leaves and steam with added palm sugar, pudding or bake it in oven, deep fried spicy cassava chips is a famous snack here is more tastier than potato chips …..but most of the cassava cake/snack sold in shops or stalls contain eggs and dairy.

Try this gluten free, egg free, dairy free simple and easy delicious famous nyonya vegan steam cassava cake.

This is a my gluten free, egg free, dairy free simple and easy delicious famous nyonya vegan steam cake.

Ingredients:

1 kg Cassava

150 gm organic raw cane sugar-you can use brown sugar to your sweetness.

1 cup coconut milk

1/4 tsp Natural Sea Salt

For Coating-

1 1/2 cup Fresh shredded coconut-for coating

3-4 pandan leaves, cut into 5″  length

Method :

Heat up the water in a wok or pot big enough for a 8″ square pan.

1.Peel the cassava and cut into small pieces

2.Place them into vita max  or food processor to mix the grated cassava, sugar, coconut milk, and pinch of salt until well mixed, about 30 seconds until smooth.

3. Pour into square pan. Layer the pandan leaves flat on top of the mixture. Steam the cassava mixture for 35 minutes on medium heat.

4.Place into a hot boiling water, steam for about 35 minutes.

5.Remove the pan from the streaming wok  when it is done. Let it cool completely before cutting. Cut into small squares and toss with the shredded coconut before serving.

Serve Steamed Gluten Free Cassava Coconut Cake with shredded coconut on the banana leaf.
