Simple and Easy homemade pesto sauce blend in the vita-max blender
Ingredients for Pesto:
2 cups Fresh Thai Basil Leaves (from Garden)
1/4 cup lightly toasted cashew nuts
1 garlic cloves (optional)
1/2 ripe avocado
1/2 cup extra virgin olive oil
1/2 tsp sea salt to taste
1/3 tsp finely ground fresh black pepper
1-2 tbsp lemon juice
Place all the ingredients in a vita mix blender except the oil.
Start to add in the oil slowly, pulsing continuously until you have a smooth paste.
Use immediately to top any pasta dish.
Note :If you do not plan to use it right away, store in a container with an additional layer of olive oil on top to prevent discoloration.
Ingredients for Paccheri:
350 gm of Paccheri
1/2 cup of organic corn
1/3 cup of carrot cube
1/3 cup of funnel bulb chopped
some lemon juice and zest
1/2 Avocado for decoration-sliced
Prepare a large pot add 1/2 tsp salt in water to boil. When boiling, add Paccheri and cook until al dente about 10-13 minutes (reserve some pasta water). Heat olive oil in a non stick pan, add the corn, carrot,funnel bulb stir for few seconds. Toss in the Paccheri, some pasta water (enough to form a little sauce on the bottom of the pan), pesto, lemon zest and season with salt and pepper. Toss until well incorporated and warmed through, about 30 seconds. Serve hot.Garnish with slices of avocado and lemon.
A squeeze of lemon juice and some zest brightens up this Paccheri dish.
* If you love the raw corn ,carrot,funnel in Paccheri just add pesto and toss well*
