4 ripe Berangan Banana -mashed ( 290 gm) the best banana for making cake .
1/2 cup organic molasses sugar
2 cup organic all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 cup mandarin orange juice soak with 2 tbsp of flax seeds for 15 minutes
1 tsp mandarin orange zest
1 tsp nutmeg powder
1/2 cup chopped Apricot
1/3 cup chopped walnuts
2 tbsp olive oil
2 Tbsp rice white vinegar
Preheat the oven 180°C
1.Sieve the dry ingredients flour ,baking powder,baking soda,nutmeg together keep aside.
2. Prepare a mixing bowl , mashed bananas add sugar beat for 5-8 minute slowly add in orange juice and fold in all the dry flour ingredients,apricot, chopped walnuts and mixed well.
3. Add in 2 tbsp olive oil.
4 . Then add your vinegar very last minutes before you bake .
5. Line a 8 inch long cake pan with parchment baking sheet.
6. Bake for 40 -45 mins( 180’c) according to your oven heat,bake until an inserted toothpick comes out clean.
7.After baked transfer the cake to the wiring rack and let it cool down .
