Juice from 1 mandarin orange soak with~2 tbsp of flax seeds
1/2 cup organic dry blueberries
1/3 cup organic dry cranberries
4 mashed banana
1/2 cup organic non -GMO & sugar free soya milk
1/3 cup chopped almonds
2 cups organic all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tbsp vanilla extract
1 1/2 tbsp olive oil
2 tbsp white vinegar
** I use 2 small cake mould- 8′ x 3 1/2 ‘ **or you can use 8″ x 5’ mould
Preheat the oven 180°C
* Soak the flax seeds in the mandarin juice for 10-15 minutes *
1.Sieve the dry ingredients flour ,baking powder,baking soda,together keep aside.
2. In a mixing bowl , mashed mango together with banana ,vanilla essence add sugar beat for 5-8 minute, add mandarin juice soaked with flax seeds, soy milk then slowly fold in all the dry flour ingredients and chopped almonds mix all together.
3.Add in 1 1/2 tbsp oil and mixed well.
4.Add in 2 tbsp white vinegar .
5.Line cake mound with parchment baking sheet. Pour the mixture into 2 small cake mould.
6.Bake for 40-45 mins( 180°c),according to your oven heat,bake until an inserted toothpick comes out clean.
7.After baked transfer the cake to the wiring rack and let it cool before cut into slices.
