300gm Soba noodles ( 1 pkt 300 gm)
1 whole Avocado cut into cube
1 pkt of enoki mushroom –clean and cut off the bottom stem
1 cup of shredded pepper cabbage
1 head fresh Organic green romaine lettuce
1 cup fresh Organic raw brocoli sprout
2 tbsp tamari
1 tsp red hot chili flake (or 1 red bird’s eye chilli-finely chopped)
1/2 tsp mustard
1/2 tsp mirin
1 tbsp lemon juice
3 mandarin orange juice
3 grated ginger
1/2 tsp of nature sea salt ,dash of black pepper
1 tbsp of toasted white sesame seeds for garnish
1.Cook noodles according to package intructions. Rinse and drain twice to remove excess starch.In hot water add enoki mushroom cook for 1-2 minutes until cooked. Set aside.
2.Wash and clean lettuce, brocoli sprout,cabbage-shredded and cut the avocado in to cube .Set aside
In a small bowl , combine whisk all the dressing .
3.Toss noodles ,enoki mushroom with dressing.
4.Arrange on a serving platter,then garnish with all raw veggie ,coriander,avocado and sprinkle some toasted white sesame seeds.
Best served in when it hot …
