Soba Noodles with Kelp & Mandarin Orange Dressing
Soba Noodles with Kelp & Mandarin Orange Dressing

Ingredients :

200gm Soba noodles ( 1 pkt 300 gm)

1 cup of fresh strips Kelp -wash & drain

1 pkt of golden needle mushroomclean and cut off the bottom stem

1 Japanese cucumber -slices

some fresh Organic red romaine lettuce

some fresh Organic raw brocoli sprout

2-4 loving hut organic veggie seaweeds ball

Dressing:

2 tbsp tamari

1 tsp lemon zest

1 tsp orange zest

1 tbsp lemon juice

2 mandarin orange juice

3  slice ginger -shredded

1/3 tsp of nature sea salt ,dash of  pepper

Method:

1.Cook noodles according to package instruction.Rinse and drain twice to remove excess starch.In hot water add golden needle mushroom cook for 1-2 minutes ,and veggie seaweeds ball until cooked. Set aside.

2.Wash and clean cucumber( cut into slices),lettuce, brocoli sprout,kelp. Set aside

In a small bowl , combine whisk  the dressing .

3.Toss soba noodles, golden needle mushroom ,kelp with dressing.

4.Arrange on a serving platter,then garnish with all raw veggie .

Best served in when it hot.
