Mandarin Orange Fruity Vegan Cake

Ingredients:

1 cup Mandarin orange juice soaked with~

2 tbsp of flaxseeds for 10 minutes

4 mashed banana (70 gm)

2 cups of organic all purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp nutmeg

pinch of sea salt

1 tbsp lemon zest

1 cup mixed chopped medjool dates (pitted), chopped apricot, raisins

1/2 cup  finely chopped walnuts, almonds

2 tbsp almond flakes for topping

2 tbsp olive oil

2 tbsp white vinegar

1 tsp vanilla essence

Preheat oven  190°c

Method:

1.Sieve the dry ingredients flour ,baking powder,baking soda, nutmeg together keep aside.

2. Prepare a  mixing bowl , mashed bananas add sugar beat for 5-10  minute slowly add in mandarin orange juice ,flax seeds, vanilla,lemon rinds then slowly fold in all the dry flour ingredients,then all dry fruits and chopped nuts mixed well.

3. Add in 2 tbsp olive oil.

4 . Lastly add vinegar very last minutes before you bake .

5. Line a 8 inch long cake pan with parchment baking sheet.

6. Bake for 200°c for 15  minutes  mins ,then turn oven heat to 180 °c for 30 minutes .Bake until an inserted toothpick comes out clean.

7.After baked transfer the cake to the wiring rack and let it cool completely before you cut into small slices.

Notes :

Pls check your oven temperature and heat !

~Different brands of oven has different ciruculation of heat…so the baking time is not fixed.~

~ Different flour have different consistency~
