QUINOA SESAME SALTY BREAD

Ingredients:

50 gm organic quinoa

150ml boiling water

Pour the quinoa in boiling water,cover with lid and soak for 1 hour. Drain excess water.

Bread Dough :

350 organic bread flour

100gm organic wholemeal flour

50 gm organic rye flour

7 gm instant dried yeast

9 gm himalayan salt

300 ml pure water

3 tbsp organic white sesame seeds ( 1tbsp for sprinkle )

Method:

Place the soaked quinoa , 1 tbsp white sesame seeds and the rest of the ingredients (except water) in the an electric mixing bowl with the dough hook attachment.

Mix for 30 seconds on speed 1 then increase the speed to 3 and slowly add in pure water, mix for about 10- 15 minutes to form a soft and pliable dough.

Turn the dough out onto lightly floured surface with some lightly floured hands, shape into a round loaf ( or any shape you love) and set on a paper lined baking tray.Blush some soy milk and sprinkle some white sesame seeds on top.

Set aside in a warm place to proof for 1  1/2 – 2 hours until doubled it size .

Preheat the oven 180  °C for 25 – 30 minutes, bake until crust is browned and the bread sound hollow when tapped removed from oven and leave to cool on wire tray .

This is a healthy aroma brown bread with nutty taste 🙂
