This is a Famous Chinese Hakka Dish-Yam Abacus Beads. It is called *Suan Pan Zi -算盘子* in Chinese Mandarin and during CNY this dish symbolises calculating of Â wealth & increasing wealth in business,as these yam abacus shaped like abacus beads. Mixed yam with tapioca flour, and some water…knead till it became a dough….. Roll the dough into samll balls and press the middle so that they look like shape of abacus beads Put all the yam abacus in the boiling water Boiled them in water until they all float up… Pour them in cold water Boil some water and cook the yam balls till they float on the water. Sieve them out into cold water to cool, then drain and mix with some olive oil to prevent the yam abacus from sticking together. Set aside…
stir fried with all these vegan ingredients… Loving hut Vegi Seaweed ball, black fungus ,veggie you love……………….
(A) 600 gm Yam (taro) -Peeled ,slices,steam for 25-30 minutes until soft
150 gm tapioca flour
1 tsp rice flour 1 tbsp corn flour
1 tbsp olive oil some water is needed
(B) 400 gm green veggie (any green veggie you love like bak choy,choy sum..)
30 gm cabbage
50 gm carrot
100 gm borocali
50 gm black fungus (soak over night) clean shredded
6 Â shiitake murshroom ( soak and cut into slices)
4 Loving hut seaweeds balls cut into
1/2 3 slices ginger -diced
1 stalks chinese parsley
1 bird’s eye chilli -diced
2 tbsp sesame oil
(C) 1 tbsp vegetarian oyster sauce
1/2 tsp sea salt
1/2 tsp veggie or mushroom seasoning
1/2 tbsp light soysauce
1/3 tsp black soysauce
1/4 cup pure water
Mixed well in a small bowl and keep aside
1.Peeled skin and slice yam (taro)steam for 25 to 30 minutes until soft.
Mash the yam using a fork while is still hot, mixed all ingredients (A) knead well until non-sticky and became a soft dough.
2.Roll the dough into small balls and press the middle so that they look like abacus beads
3.Boil some water and cook the yam abacus till all float on the water. Sieve them all out into cold water , drain and mix with some olive oil to prevent yam abacus sticking together. Set aside.
4. Heat a wok and add 2 tablespoon sesame oil , ginger, chilli ,shredded mushrooms and black fungus, carrot ,(C)seasoning andÂ stir fry until fragrant .
5. Add remaining Ingredients (B) and stir fry till evenly cooked. Lastly, add in all the yam abacus stir for 1 to 2 minutes untilÂ sauce is slightly dry and totally cooked.
6. Garnish chinese parsley or coriander. Best to serve hot !! Happy Vegan Lunar New Year ! 🙂
