Good Fortune Fried Shanghai Rice Cake
1 packet Shanghai dry rice cake (soak over night )
Pls using pure filter water for soaking ,rinse under water 2-3 time drain and keep aside
80 gm black fungus (soak over night) clean shredded
5 medium shiitake mushroom (soak over night) slices
300 gm bak choy- clean and cut into 2 inch
50 gm cauliflower
1 red bird’s eye chilli
some coriander or chinese cilantro
2 slices ginger-finely chopped
1/2 tsp sea salt
1 tsp tamari
1/2 sweet black soysauce
Dash of black & white pepper
1/2 tsp mushroom or veggie seasoning
2 tbsp sesame oil
1 cup pure water
1.Heat pan add ginger and sesame oil fry till fragrant then add in shiitake mushroom, cauliflower, chilli,black fungus .
pour in 1 cup off water add in all the seasoning cover the lid and saute for 5 minutes in medium heat .
2. Add the bak choy ,then rice cake cover the lid for another few second .
3. Fry and mix well until totally cooked and water is slightly dry.
4.Dish up, garnish with coriander. Best served while still warm !
2 ~ Stir fried Lily Bulb and Abalone Mushroom~
1 packet of Lily Bulb- petals separated
200 gm Abalone Mushroom
1 Small red chilli finely chopped
3 Slice ginger- shredded
1/3 tsp sea salt
1/2 tsp Crush black pepper
1/2 tsp Tamari
1 tbsp Black sesame oil
3-5 tbsp Water is needed
1.Heat oil in wok .Fry the ginger, chilli till fragrant. Add lily bulb, abalone mushroom, stir fry for second .
