Oil Free Vegan Banana Blueberry Cake

I try to made oil free vegan cake today : hey !  this is my first time experiment! I was wondering a vegan cake recipe that doesn’t use oil ?? Well~~~in conclusion I have made 2 oil free vegan cakes ! They turned out perfect and my family,  friends  love itvegan love…Try this  Oil free Vegan Cake  ….

Ingredients :

4 ripe banana – mashed

3/4 cup granulatued sugar (  I reduce the sugar to 1/2 cup )

2  tbsp flax seeds

2 cup organic self raising flour (or ordinary wheat flour)

2 tbsp cocoa powder

1/3 tsp cinnamon

1 tsp vanilla extract

1 tsp baking powder

1 tsp baking soda

pinch of sea salt

2 tbsp apple cider vinegar

1 tbsp pumpkin seeds

2 tbsp blueberries

1 tbsp cranberries

1/2 cup almond milk (any nut of milk of choice)

Method:

Preheated Oven 180 °C

1. Mashed the banana add sugar,flax seeds and whisk well for 5-10 minutes.

2.Sieve the dry ingredients flour, cocoa power,baking powder,baking soda,cinnamon together.

3. Add almond milk, salt, vanilla then all the dry flour ingredients to the mashed banana,fold in the flour blueberries,cranberries, pumpkin seeds.

4 Add your apple cider vinegar very last minutes before you bake !! Mix together until smooth.Line a 8 inch long cake mould with parchment baking sheet.Pour mixture to mould .

5. Sprinkle some pumpkin seeds on top .

6. Bake for 35-40  mins(18O °C) ,according to your oven heat,bake until an inserted toothpick comes out clean.

7.After baked carefully transfer the cake to the wiring rack and let it cool completely before you cut into slices.
