Ingredients:

1 medium Jicama

4-5 raw mushrooms

*Marinated mushroom with vinegar,black pepper,salt,sesame oil for 2 hour.Coarsely chopped the mushroom *

Fresh basil and cilantro -finely sliced or chopped

Carrot -diced

Cucumber -diced

Cherry tomato -diced

Coconut pulp-diced

2 slice ginger -diced

some pumpkin and black sesame seeds -garnish

Chilli power or chilli flakes – garnish

Miso Cashew cream:

1 cup cashew cream -soak over night

1/2 lemon juice

1/3 cup coconut pulp

1 tbsp organic white miso

some water is needed

Place all into vita-mix blend until smooth and creamy.

Method:

Peel the jicama into 1/2 cm thick slices. Set aside.

Place all the ingredients in a mixing bowl add miso cashew cream and mix well. Place a spoonful of the filling on top of each jicama slice.

Sprinkle some toasted pumpkin seeds,black sesame seeds, and chilli power or chilli flakes.

*Jicama is a very versatile vegetable that contains a high amount of vitamin C, low in sodium, and has no fat !!! *
