Gluten free Banana Small Crepes

Ingredients:-

1 cup Organic Gluten free Pancake Mix flour

1 cup Organic Wheat flour

2 Banana -mashed

1 cup of  coconut  water

1/2 cup  coconut milk

2 tbsp organic granulated sugar ( any sweetness of choice)

Pinch of himalayan red salt

1 tbsp Vegan margarine-Nuttelex

Method:

Place all the ingredients into a medium sized mixing bowl. Whisk the coconut water,coconut milk mixture into the dry ingredients until all combined, and get a nice thin batter. The batter should be much thinner than pancakes.

Heat 6″ nonstick pan. Lightly grease. Measure about 1/4 cup batter into pan. Tilt pan to spread batter. Once crepe has lots of little bubbles, loosen any edges with spatula. Flip crepe over. This side cooks quickly. Slide crepe from pan to plate.Once cooked the crepes should be a light golden colour, it will be soft and fluffy.

There you have your sweet crepe ready to be filled or coated with what ever you like. Fruits Jam,Stewed pineapple ( apple), or just freshly squeezed lemon juice with fresh kiwi fruits , lettuce,here is no limit !!
