Veganlogy Banana Blossom Curry

 

Last week some friends asked me, how to cook and clean the banana flower ??

They never cook and eat this banana blossom before.Banana flower mostly use in Malay and India cuisine here- Malaysia .

Banana flower also known as banana blossoms or banana hearts. They are consumed throughout Southeast Asia and also in India as well. Today I bought the banana flower from an Malay morning market.

Em..is really need time in cooking this banana flower, most Chinese people here do not eat and cook this often.

I think it is not so a laborious work to cook this banana flower, you just need to have some~ LOVE

How to clean the banana blossom ??

First apply some cooking oil or margarine to your hand ,so sap won’t stick on your hand !

or using kitchen hand glove …

Peel out about 6-7 pieces of the outer red purple colour bracts.

Collect some part of  blossoms,removed centre part of the flower ,

you will see a thin disc like cover hard like plastic petal and

a thin hard translucent stamen in the centre .

All these translucent plastic petal and thin stalk to be removed together.

Veganlogy Banana Flower curry !

You can serve this curry with Ketupat. Brown Rice or Noodles .

(A)- Ingredients:

1 medium banana flower

2 potato peeled -cubed

1 carrot cut chuck

4 okra -lady finger cut 2 inch

2 green chilli cut 1/2

4 Organic tofu puff cut 1/2

1 cup long green beans cut  1 inch

1 torch ginger flower diced

1 litre  fresh coconut milk (extract from 1 grated coconut )

(B )- Ingredients:

3 tbsp chilli paste-home made ( dry chilli ,galangal,candle nuts etc..)you can add more chilli

paste if love spicy curry.

1 tbsp vegetarian curry powder

1/2 tsp turmeric powder

1/4 tsp chilli  powder

1/4 tsp cumin seeds

1/2 tsp coriander powder

1/2 tsp vegan belacan

some curry leaves

2 stalk lemon grass cut 2 inch long

(C)- Ingredients:

1/2 tsp sea salt to taste

1/2 tsp veggie seasoning

3 tbsp coconut oil

Method:

1. Apply some cooking oil to your hand ,sap won’t stick on your hand.

Wash the flower and peel out about 6-7  of the outer red purple colour bracts,for certain limit only leave the cone and collect some part of  blossoms.

Take each flower stem and observe carefully,removed centre part of the flower ,there will be a flat and thin disc like cover hard like plastic petal and a thin translucent stalk in the center of the stem which has a ball like on the top of stalk, remove these two things from each stem.

Cut banana flower cone into 1/2 ,and some part of the blossoms, boil in hot boiling water for 5 minute .

To prevent them from browning,immediately rinse the banana flower with cold water and soak with lime juice for 5 minutes,and set aside…..

2. Heat oil in the the wok , fry only potato ,carrot  for 5 minutes then add all (B) ingredients fry for another second until fragrant .

3. Pour in the coconut milk boil for 10 minutes add all (A) ingredients ,and saute on medium heat. Keep  stirring occasionally, until banana flowers and veggie are tender.

4. Add salt ,seasoning to taste. Remove from heat.

Serve hot banana flower curry with brown rice  or ketupat.
