Chinese Vegan Lotus Root Soup
Chinese Vegan Lotus Root Soup

Ingredients:

200g Lotus roots, sliced

200g  Carrot , chuck

100g  Peanuts (soaked for 3-4 hours)

20 Red dates( removed the seeds)

5 pieces  Honey dates

5 pieces dried figs

20 gm Goji berries

30 gm Loving hut Organic vegan Lucky chunks

2 litres water

Salt to taste

Method:

Bring water to a boil, then add all the ingredients,

except goji berries, add in after 1  1/2 hours

Allow to come to a rolling boil again. Reduce the heat then

cover the pot and simmer for  2 ½ hours.

Adjust with seasoning and serve hot .
