300 gm Pumpkin cut into cube
150 gm Eggplant (Aubergine) sliced diagonally
4-5 Okras -Ladies fingersÂ sliced diagonally
1 sliced ginger (diced)
1 tablespoon of cooking oil
1 teaspoon of Â black pepper
1/2 teaspoon of Â himalayan real salt
1/2 teaspoon Tamarin
1 cup of water
1. Heat cooking oil in wok Â fry Â the diced ginger and pumpkin , add Â 1 cup
of water and black pepper to saute Â the pumpkin for 5-8 Â mintues ,
add the eggplant to cooked forÂ another 5 minutes
( if you like the softness you can add eggplant and okras together)
2.I like Â the crunchiness of okras,so I add the okras to the last…..
3. Add the seasoning ,stir fry these three magical mix together
constantly utill theÂ water dries completely.
Serve hot with brown rice !
