300 gm of Bitter Gourd (Ampalaya )or bitter melon (sliced into small pieces )
30 gm of Goji berries
2 slice of ginger (shredded)
1/2 teaspoon himalayan real salt
1/3 teaspoon of homemade organic fruits enzyme
1/2 tsp of grape seed oil
1. Place the sliced ampalaya -bitter melon into small bowl sprinkle with salt generously.
Toss to coat every piece with salt. Leave for at least 10 minutes. Squeeze out the juices, rinse and drain, to drown out the bitterness.
2. Add in all the seasoning, except goji berries cover and refrigerate for
30 minutes to left the bitter gourd soak up the marinade!
3. Before serve add in Goji berries and mixed well .
Bitter gourd -or bitter melon has many health benefits. It contains a mixture of flavonoids and alkaloids which stimulates the pancreas to produce insulin that controls the blood sugar levels in diabetics. If you are a diabetic, then bitter gourd is good for you.
