1 (200-300 gm) Eggplant cut into strips
1 tablespoon olive oil
some toasted sesame seeds
some chilli flakes (optional)
1-2 some small green chilli (dice)
toasted white sesame seeds and
coriander or clantro for garnish
2 tablespoons light soy sauce
1/2 tsp himalayan real salt.
60 ml water or Veggie stock
1/4 tablespoon raw sugar
1. Place all the seasoning ingredients in a bowl and mix well. Set aside.
2. Heat oil .Fry the eggplant for 2 minutes. Pour in the seasoning and simmer for 2 -3 minutes or until it is dry.
3. Top with small green chilli ,coriander , sprinkle with toasted sesame seeds.Quick and Easy dish!
